First Farm Share Juice

Sometimes we get a little busy at the farm. Sometimes our farm share members get a little busy with their jobs, families and lives. We all have this in common. We also have in common tons of fresh produce. Sometimes there is not a lot of time to prepare a healthy meal. Turns out that being busy does not mean sacrificing your nutrient intake. All you need is a juicer or a blender to turn all those vegetables into a healthy drink to take with you or maybe enjoy on a hot afternoon.

In addition to exciting recipes to make with all the produce each week, we will be sure to post a juice and smoothie recipe for some of the ingredients in each share. Vegetable drinks are a great energy boost and a handy way to use up any produce you might have left before picking up your next share.

JUICE ONE
1/4 cabbage
1 kohlrabi, peeled
1/2 bunch kale
1/2 bunch collards
1 lemon, with or without peel to preference

Run all ingredients through your juicer and serve cold. Makes about two servings. This juice is also good with the addition of a few celery stalks.

SMOOTHIE VERSION

Use the same ingredients as above, chopped to even sized pieces. Add one cup of ice and enough liquid to cover about one third of the blender contents. Some good options are orange juice, coconut water or even plain water. Blend on high till contents are smooth, usually about forty-five seconds.

*A quick note on vegetable juices and smoothies:
Many people tend to think these drinks taste a little too “healthy.” We usually like that sort of thing but always adding a lemon or lime to juice and smoothies really helps the flavor. Using orange juice and a few dates or some frozen berries helps sweeten smoothies and adds to their nutritional content. Adding an apple or a peeled orange to juice recipes is a nice break from a vegetable only drink.
